1 whole fish of your choice, cut into steaks
2 litres of water
5 garlic cloves, roasted
5 Thai chillies, roasted
4 lemongrass stalks, crushed
2 red onions, or 4 red shallots, chopped or crushed
1 teaspoon MSG (optional)
2 tablespoons sugar
1/2 cup tamarind puree, from a jar
2 tablespoons fish sauce
Step 1: Add the water to a cooking pot, and add the fish.
Step 2: Add the garlic, chillies, and lemongrass, and shallots, simmer until the fish is nearly cooked.
Step 3: Add the tamarind, and season with fish sauce, MSG, and sugar. Add more seasonings if needed.
Step 5: Serve and enjoy with rice. :D :D :D
